Vegetable Marinade

This marinated salad is a welcome change from the ordinary tossed green salad. It is wonderful for picnics and barbecues.

Ingredients

1/2 cup salad oil
1/4 cup vinegar
1 tsp salt
1/4 tsp. black pepper
2 cups broccoli flowerets
1 cucumber, peeled and coarsely chopped
2 tomatoes, coarsely chopped
1/2 cup coarsely chopped red onion
1 cup shredded Cheddar cheese

Directions

In a small bowl, combine oil, vinegar, salt and black pepper to make dressing.

Mix all vegetables and cheese in a salad bowl.

Pour dressing over, tossing to mix well.

Cover and chill 3 to 4 hrs., stirring occasionally

Comments

Good served with: Any kind of quiche, cold cuts, fried chicken or sandwiches.
